The Côte Shiraz

Thomas Wines The Côte Shiraz draws from the Côte d'Or Vineyard in central Pokolbin in the Hunter Valley. It lies at almost 200 metres elevation on a steep northerly slope.
The Côte d'Or Vineyard was first established in 1866, then replanted in 1971. These vines are dry grown on brown loamy soils scattered with Permian fossils.
The fruit is handpicked, destemmed and cold soaked for 24 hours prior to fermentation. Post ferment, the wine spends a week on skins before it is pressed to French oak hogsheads ranging from new to fourth use.
After 15 months of maturation, the wine is blended and bottled. It develops in the bottle for around one year prior to release.
Deep red purple, Thomas Wines The Côte Shiraz is fragrant and medium to full bodied with rich dark berry flavours and fine tannins. Cellaring potential is 10 years.
